where the hell did three weeks go? i turned around for one second, just one second, and they were gone. what's the deal, three weeks? i had a lot to accomplish while you were here and now i'm left with a not-even-half-finished to-do list. bah.
also, health insurance companies are the pits. new favorite reason: i mailed my quarterly payment in advance of the deadline (with plenty of snail-mail-dink-around-time to spare, and yes, i like hyphens tonight), BUT... they haven't yet processed the check. so they cancelled our health insurance coverage. and it will only be reinstated if they discover by mid-week that they did, in fact, process the check before the coverage was set to lapse. even though i did what i was supposed to do. still trying to figure this one out. my best explanation so far: big corporations are a lot like the devil (a.k.a. wal-mart, synonymous with "devil") and have no interest in your well-being since your well-being doesn't typically impact their bottom line. (in pundit world i would make a very bad republican.) here's hoping that check situation works itself out. otherwise i may have to think very mean thoughts about my health insurance provider. yeah, mean thoughts, that's all i got. i'm not very confrontational when i know it won't get me anywhere.
anyway, who needs to be confrontational? not this girl. why? because i have stuff to alleviate the rage: labneh! yes, i found some at jungle jim's yesterday. i bought three cartons: two regular, one mint. the minty one needs to be balanced out with garlic... it's a little too minty. and the plains will be made more exciting when i dump in fresh mint and garlic. i can't wait. i also found pre-made stuffed grape leaves (already dug into them, they are pretty yummy) AND fresh(-ish) lebanese olives. green and black. i mixed 'em up in a big container and have been munching virtually nonstop. my sodium levels are probably back up to about where they were for over seven weeks in the middle east, so all is truly well.

Olivia! That is ridiculous! Yo know what else is ridiculous? There's a woman in my nursing class who is 3 months pregnant, and her husband is losing their health insurance soon. And guess what...NO ONE will insure them. It's like a preexisting condition or something. Ridiculous. Anyway, it's weird to think of mint in something not also chocolatey...is it good?
