my dad & i frequently eat lunch together in oxford, & one of our go-to spots is bar 45 east on the main drag downtown. dad likes some of the sandwiches, i like the black bean soup (with a side of sour cream for dipping!) & the "old 45" salad. although i still haven't managed to finagle my way into getting the recipe for the soup (i don't blame them, it's delicious & deserves to remain a secret), the salad's not exactly a complicated nut to crack.
that being said, if you're into salads, you might be interested in this one. it's sneakily fattening (who knew raspberry vinaigrette could contain 8 grams of fat per tablespoon?!), but quite satisfying.
ingredients:
- lettuce --> i substitute baby spinach leaves, they taste much better & are better for you
add the following to taste:
- sliced mandarin oranges
- almonds (whole or sliced, but preferably plain)
- bleu cheese crumbles
- raspberry vinaigrette dressing
voila! a lunch even us cooking simpletons can pull off! sure, it doesn't really count as "cooking," per se, when you just dump some stuff in a big bowl... but life is all about baby steps.
